Cajun Chicken Salad - Recipe of the Week

Our recipe of the week this week is the Cajun chicken salad. A great mix of lean protein and beneficial greens, it is perfect to keep the likes of vitamin levels topped up and a great meal to satisfy your hunger in a healthy way. Recipe Ingredients List

• Chicken Fillets (two)
• Mixed Leaves such as lettuce, rocket, spinach etc. (two handfuls)
• Cherry Tomatoes (eight)
• Cucumber (five slices)
• Bell Pepper (half)
• Red Onion (half)
• Olive Oil (one tablespoon)
• Paprika (half a teaspoon)
• Ground Cumin (half a teaspoon)
• Dried Thyme (half a teaspoon)
• Cayenne Pepper (half a teaspoon)
• Salt (half a teaspoon)
• Black Pepper (sprinkle)


Step 1

Preheat your oven to 180 °C. To make the Cajun spice, mix together all of the spices together in a bowl. Once mixed, rub the spice mix into the two chicken fillets (make sure to wash your hands with warm soapy water before and after handling raw chicken!).


Step 2

Over a high heat on your hob, heat the tablespoon of olive oil in a pan. Once it has heated up, add the chicken fillets to the pan and cook them for one minute. After this minute has finished, turn the chicken fillets over and cook them for one more minute.


Step 3

Remove the chicken fillets from the pan and place them onto a lightly greased baking tray. Cook them in the preheated over for at least ten to fifteen minutes. While they are cooking, combine the mixed leaves, cherry tomatoes, bell pepper and onion in a bowl to make the side salad. When checking that the chicken is fully cooked, ideally use a meat thermometer to ensure they are at the correct temperature and / or make sure the juice from then runs clear and transparent.
